Slow Cooker Peanut Butter Chicken (Guest Post by Whitney)

What makes it good = this recipe is so easy, unique, and tasty! The peanut butter, citrus juice, and soy sauce create a flavorful and aromatic sauce and the Sriracha sauce adds a delightful kick (if you’re up for it).


Peanut Butter Chicken Over Rice
This chicken may look boring, but don’t let this picture deceive you.


16 frozen chicken tenders (or an equivalent number of chicken breasts)

1 cup creamy peanut butter

4 tablespoons soy sauce

4 tablespoons citrus juice (lemon juice, lime juice, or orange juice)

1/2 teaspoon black pepper

2 cups of chicken broth (or water and bouillon granules)

2 teaspoons of Sriracha sauce (optional)

cooked rice (6-8 servings)

Place frozen chicken in slow cooker (no need to thaw). Whisk together all other ingredients in small bowl and pour over chicken. Cook on low for 6 hours. Serve with rice.'
