Slow Cooker Peanut Butter Chicken (Guest Post by Whitney)

What makes it good = this recipe is so easy, unique, and tasty! The peanut butter, citrus juice, and soy sauce create a flavorful and aromatic sauce and the Sriracha sauce adds a delightful kick (if you’re up for it).

 

Peanut Butter Chicken Over Rice

SLOW COOKER PEANUT BUTTER CHICKEN

16 frozen chicken tenders (or an equivalent number of chicken breasts)

1 cup creamy peanut butter

4 tablespoons soy sauce

4 tablespoons citrus juice (lemon juice, lime juice, or orange juice)

1/2 teaspoon black pepper

2 cups of chicken broth (or water and bouillon granules)

2 teaspoons of Sriracha sauce (optional)

cooked rice (6-8 servings)

Place frozen chicken in slow cooker (no need to thaw). Whisk together all other ingredients in small bowl and pour over chicken. Cook on low for 6 hours. Serve with rice.
